Stewing Hens

We’ve gotta phase out some less than productive laying hens to make way for new laying hens. So What’s their fate? The POT! If you place your order now, it can be your pot. The very best stock and broth comes from the 2-3 year old hen as they’ve had time to develop a good layer of fat and their meat has an awesome flavor that you can’t get from a young broiler. 1. Do you eat the meat as is or put it in soup/stew? I have five hens that seem to have stopped laying. I really hate to butcher them, especially as two are from my very first batch of chickens, but it doesn’t seem to make sense to keep feeding unproductive birds. 😦

  2. You really must stew them, their meat is just too tough to roast or bake. The most awesome broth you’ll ever sip!
