Homemade Ketchup from FRESH Tomatoes

We’re trying to do as many different things with our vast quantities of tomatoes as possible. James, our six-year-old is a ketchup fiend and has been pining for us to make some ketchup. While surfing the world-wide-web, I came across this YouTube video from Noreen’s Homestead. It seems like a really simple and easy recipe so we’re going to give it a go. She doesn’t list the ingredients so, if you’d like to try making your own, here’s her ingredients and instructions.

4 lbs fresh very ripe tomatoes cored and cut into chunks

1.5 medium onions quartered

4 cloves garlic roughly chopped

2 tbsp EVOO

1/2 cup Apple Cider Vinegar (ACV)

1 tsp black pepper

2 tsp salt

1/2 – 1 cup sugar/brown sugar/honey/agave nectar (to taste)

1 tsp ground clove

1 tsp ground cardamom

2 tsp paprika

1/2 tsp cinnamon

1/tsp mace

1/2 tsp allspice

First saute onion in EVOO until they begin to soften. Add garlic, continue to saute until the garlic browns and onion is translucent. Add tomatoes, ACV and spices. Bring to boil then reduce to a simmer for one hour. She uses an immersion blender to puree in the pot, if you don’t, let it cool then puree in a food processor add sweetener or ACV to taste. Return to a simmer for an additional 30 minutes to thicken. This makes approximately 1.5 pints and can be canned in water bath.

I really enjoyed watching the video as I am a very visual person and it helps me when I follow a recipe or any other new project. Have fun!
